Among the salted tomatoes produced in the Yatsushiro area of Kumamoto Prefecture, only 1% of them are the finest quality and are branded under "Royal Celeb". Generally, tomatoes with a sugar content of 7 degrees or more are called "fruit tomatoes", but Royal Celeb's sugar content is over 10 degrees. They are also called "salts tomatoes" because they are grown on land that was once reclaimed salt fields. The technique consists in reducing the water content of the tomatoes to the point where they wither, concentrating the flavor and sweetness of the small fruits.
These tomatoes are born under harsher conditions than ordinary fruit tomatoes, with their vitality fully activated. The name 'Royal Celeb' is only gives to fruit that passes the standard of 10 degrees or more in sugar content through optical sensor sorting.
